Raspberry Meringue (Valerie Koo in Raleigh, North Carolina):
These colorful meringues were made with a fresh raspberry compote swirled into the meringue before baking. It was a big hit with everyone in my family, including my two sons who usually prefer something chocolatey!
The boys are attending "virtual summer camps". I am planning my first drive-by birthday parade and online Zoom party for my son. We also created an obstacle course inspired by American Ninja Warrior in the backyard.
